One line is the official Dutch butter quotation. The other is what Get Fair Dairy actually executed in the same weeks — spot butter out of the Netherlands, Germany and Belgium, weighted by tonnage. Both sides are averaged over the same four weeks, so what you are looking at is the market rather than the smoothing.

The difference, week by week

Over the last 13 weeks the executed price averaged €157/t below the quotation. The quoted line is the Officiële Nederlandse Zuivelnotering for fresh butter, set every Wednesday by the Commissie Officiële Nederlandse Zuivelnoteringen and published by ZuivelNL — euro per 100 kg ex factory, converted here to the tonne, every week since January 2022. Every point on the executed line is the volume-weighted price of the published deals in the four weeks up to that date — sometimes a dozen, sometimes one. Where the book holds none, the line hops the hole with a dash: it joins the two measured points on either side and claims nothing in between. Butter only for now: the other commodities do not yet trade in enough weekly volume to carry a weekly line.
