What is your milk worth?

The same hundred kilos of milk, priced five ways. Every route this desk brokers, valued off the EEX settlement, the German, French and Dutch physical quotations, and the trades we executed ourselves — and the answer changes by less than you would think.

The milk you are pricing

Yields move with what is in the milk, and the difference is not small: Dutch milk carries 4.51% fat against the European pool's 4.15%, which is around eight per cent more butter out of the same hundred kilos. Most published calculators fix this at 4.00 / 3.40 and never say so.

Gross revenue, before processing cost — a public page cannot know what any particular plant spends, and inventing it would turn a defensible figure into a guess. Yields are a mass balance on European milk and vary by plant; cheese yields especially, which move over a per cent for every point of finished moisture. Buttermilk powder and cream are quoted by no source we hold and start from our own assumption. Not investment advice. Cream fat starts at parity with the fat in butter, which is a starting point and not a fact — the spread between the two moves, and it is where valorization models disagree most.
